Recipe Risotto with sausage and lentils New Year's Eve

Preparation:

In a frying pan to fry the onion into small pieces in oil. Add rice and toast without burning. Then add a bit of water to cook the lentils with a little of lentils. Continue cooking, stirring occasionally and adding more water to cook the lentils. Meanwhile, slice 2 slices of sausage, remove the skin and cut into pieces. Then add the sausage into small pieces and continue cooking, stirring and adding the cherry sauce ready until you make a nice sauce. Keep cooking the risotto in the sauce adding water when necessary. When the risotto is done, let it rest for a couple of minutes before serving. Serve decorated by some nice pieces of sausage.

Recipe Parmesan Artichoke

Preparation:

Take the artichokes. Clean them by removing the outer leaves. Begin to prepare the batter with flour, water and salt. Mix well and season with flour or water until you get a very soft batter as in the picture. At this point finish cleaning the artichokes: cut the tip of the artichoke, eliminate almost all of the stem and the remaining part of the shank. Cut the artichokes into two parts and cut the artichoke hearts into thin slices. Put the slices in the batter freshly prepared. Heat the vegetable oil in a pan and fry the sliced artichokes. Fry on both sides and then put on a plate covered with a sheet of absorbent paper or a paper towel to absorb the excess oil. In a small bowl mix the sauce of cherry ready with a little pepper. Prepare mint, basil, parmesan and mozzarella or scamorza. Take portion of bowls from oven, place on the bottom a little 'sauce ready for cherry and basil. Arrange a first layer of fried artichokes. Arrange artichokes on a little more Don Carmelo cherry sauce. Arrange artichokes on the smoked cheese (or mozzarella) into slices and add more chopped basil and mint. Sprinkle with grated Parmesan cheese. Make another layer of fried artichokes. Add a little more Don Carmelo cherrytomato sauce. Put the slices of smoked cheese here and there, chopped basil and mint and other pepper . Add another sprinkling of grated Parmesan cheese and garnish with a leave of mint. Bake at 180 degrees for 15-20 minutes ... then serve!

Panzerotti with mozzarella cheese

Preparation:

For the pastry: put in a bowl flour, oil, salt. In on other bowl dissolve yeast in hot water with sugar. Pour the flour and add a glass of warm milk. Mix the ingredients and add flour if necessary. Prove dough and in the meantime you can prepare the stuffing: cut mozzarella cheese and flavour with ready cherry tomato sauce, salt, pecorino cheese and pepper. On a pastry board form a circle with a rolling pin and put mozzarella cheese; close the rims with a fork. Fry them. Enjoy.
